Teeny Cheesy Cremini Pizza Recipe
Today I needed to use up some items in my fridge before they went bad, and as I was brainstorming, my belly started to crave some pizza. I threw some things together, and I was skeptical that it would be any good. BUT it was delicious (and vegetarian)!
Teeny Cheesy Cremini Pizza
Melissa Gruver
2 Whole Wheat Tortillas*
few spoonfuls of leftover spaghetti sauce*
grated Parmesan cheese
shredded Italian cheese mix*
handful of cremini mushrooms* (or any other type)
fresh basil*
pepper
red pepper flakes
*indicates that these were the items I was NEEDING to use
Heat oven to 350 degrees. Spray pan with non stick spray. Sprinkle Parmesan on tortillas and spread spaghetti sauce over top leaving a small edge. Layer the following: shredded cheese, chopped basil, mushrooms, a little more shredded cheese. Top with a pinch of freshly ground pepper and a pinch of red pepper flakes. Bake at 350 for 8 minutes. Enjoy!

SNOW DAY!!!
This is the view from my living room window:

I got an email telling me the university was closed today due to ice this morning. It wasn't until I got up and about that I realized it was SNOWING! I love that I got the day off b/c today was my BUSIEST week for meetings and things. Hmm..I may go out and make some snow cream... I live for days like today.
MEL'S SNOW CREAM RECIPE
Grab some freshly fallen CLEAN snow (I usually get the top half of the layers on a car).
Put the snow in a bowl and add vanilla, milk, and sugar (brown or white) to taste.

OPTION: stir in some flavored coffee creamer, or powdered instant latte mix for and added delight.
ENJOY!

Note: ALWAYS - ALWAYS make sure the snow is clean. It takes at least one
to two hours for snow to clean the pollutants from the air, then use
only snow that
has fallen after that first cleansing snow. It also goes without saying
(but I will anyway), to make sure you do not collect the snow where
animals and birds eat (or do
other things).source

Sweet Potato Cakes...
No, it's not the the new pet name for my boyfriend...it's what I made for dinner tonight!!!

Tonight, my friend Anneka came over and we made these super yummy sweet potato and black bean cakes for dinner. I was really surprised at how well they came out. I found the recipe on this blog and we all know how much I love trying out new vegetarian wares. I didn't have scallions or jalapeƱos, so I just threw in some onions and called it a day.
The only issue I ran into came when we were trying to decide what to serve it with. I threw some fresh spinach on the plate and warmed up some leftover stuffed mushrooms from a recent wedding.

It seems like my guests enjoyed themselves. This recipe is only 165 calories for two cakes, which works since I am having to count calories these days. This recipe is adapted from a Martha Stewart recipe. I love Martha these days; she has much more street cred since getting out of the slammer. However, I don't like how she constantly interrupts guests on her show (oops...I guess I just ruined my chances to be one of those guests).

Barn Yard Ice Cream Sandwiches
So, JT bought me this ice cream sandwich maker. It's pretty amazing and it makes barnyard shapes!!!
Here's how they turned out:
We used butter pecan ice cream and chocolate chip cookies.

Don't they look delicious?

Oozey. They were a lot better after we stuck them in the freezer a bit.
